Beyond the ever popular drive down PCH at sunset, I like to exit off the 55 freeway and drive Santiago canyon road. It is a fairly wide road with some nice gentle curves that are perfect for driving "slightly over the speed limit -- not that I ever break the law". To get there exit off the 55 freeway at chapman, go east. Chapman will turn into Santiago Canyon. Santiago canyon will eventually take you to Rancho Santa Margarita / Mission Viejo. If you do not want to return via the canyon route, continue travelling on Santiago Canyon Road and it will eventually turn into El Toro Road. El Toro road has a exit/entrance to the 5 freeway.

Finally, a good selection of restraunts in rancho santa margarita --- excellent date destination.

...and the Live Oak/Trabuco Canyon Road turn off is an added bonus to this route.

Also Black Star and Silverado Canyon's are great up and back alternatives.
