I used to own a 987.1 Cayman and I picked up some 18" S rims to mount track tires too.

I replaced the 987.1 with a 987.2 Cayman S. It came with 19" rims.

My question is, I'm assuming I'll have no issue using my 18" rims on my 987.2 S? I was mostly concerned with brake clearance which appears to be plentiful with the 19" rims.

Easiest way is to mount the bare rim and see for yourself. Make sure the offset is correct. BTW, there have been numerous threads on wheel fitment on P9.

I took the 18 rims from my 987.1 and put them on my 981 GTS last week, with new snow tires. I put the set on myself, piece of cake, and all my worrying that they wouldn't fit was for nothing. So can't imaging you'd have an issue doing the same with the 987.2

They'll fit (personal experience).
