After seeing my friend's 2016 GTS battery go south, I decided to head off any untimely issues and replace what I believe to be my 2014's original battery (not date stamp or indicator on the battery). I noticed the Porsche dealership didn't charge me a core charge and I'm not sure what to do with the old one? I've had it on a battery tender for about 2 years and it's been working without issue.

On a side note, it would have been helpful to have some indicator of the battery's age, since I'm the second owner.

If you have been using a battery tender, your battery should be fine. I had the original battery in my ‘07 when I sold it in 2015. And my 2015 still has a strong battery — again, I routinely hook it up to the tender for any time > a few days being idle.
