Unless different in your country, turning it off is a setting (here anyway) that stays set when car is next started. I've heard some countries have different requirements for that to reset I believe?

Changing these settings can only be done with a PIWIS 2. Without this you will have to turn off each time in the car.

As Georgeair stated, depending upon your country, the switch setting may be retained. I turned mine off years ago and haven't touched it since.

or just put in a racing battery. As soon as I put in a racing battery the car always thinks it is low and automatically disables the start stop.

Hello

No need for the original diagnostic or messing with the battery etc.

You just need a good diagnostic kit that give you this option. My car imported from England with start stop always resetting. It only took few minutes .

I can tell you the diagnostic kit brand in few weeks that i will go for the service. If its of any help, usually diagnostic kits that allow you to activate the "dyno rolling mode" should have the start stop option also.
